砂糖65g加大概10g以内的水,煮至焦糖色后,稍微放凉
牛奶加热至温热,分两次加入焦糖液中搅拌均匀,如果焦糖凝固了,就再稍微加热至焦糖融化即可,稍微放凉
蛋黄2个+10g糖打至发白浓稠后,慢慢加入焦糖牛奶搅拌均匀
加热至85度,微微浓稠,加入吉利丁搅拌均匀后,隔水冷却至浓稠
淡奶油打至6、7分发,分次与焦糖蛋奶液混合
