全蛋打散,水浴加热至比体温略高。加入砂糖。用打蛋器高速打至浓稠,拎起打蛋器,滴下的面糊可以写字,痕迹不马上消失为止
低筋粉和可可粉混合过筛。分次筛入面糊。用蛋抽一点点捞匀。注意不要花圈。要一下下拌匀。拌完的蛋糊要感觉有浓稠感。取一部分蛋糊,与融化的黄油混合,再倒回面糊。用刮到翻拌几下。迅速从高处倒入烤盘。刮平表明。放入预热180度的烤箱,烤约18分钟
