牛奶和南瓜糊拌匀,煮至近沸腾
蛋黄打散,加入砂糖,擦开至溶解(不要打发)
低粉和玉米淀粉过筛,加入蛋黄液,拌至无粉颗粒
牛奶南瓜糊缓慢注入蛋黄糊,先慢后快(不要把蛋黄烫熟)
将搅拌均匀的蛋奶液过筛后倒回奶锅里,开中火加热,不断搅拌至稠厚
离火,用打蛋器快速搅拌至面糊光滑细腻
再中火加热,翻拌至锅底形成薄膜,再离火,加入软化黄油
底部隔冰水,翻拌降温后,盖保鲜膜冷藏
使用前取出,打发均匀,鲜奶油打发成略过干性发泡,与卡仕达酱打匀,呈冰激凌口感,可再冷藏一会
