色拉油,水,盐放在锅中,用小火煮沸
低筋面粉过筛倒入煮沸的奶油水中,以小火搅拌30秒左右,至面粉不粘,即可离火
冷却至65度左右,将蛋液分四到五次加入到面糊中,用木勺搅拌均匀
拌至面糊拉起时,会慢慢滴下,成现三角状
面糊装入裱花袋,用平口花嘴挤在烤盘上,每个面糊间隔一小段距离
放进烤盘之前,在表面喷水
烤箱预热200度,烤20分钟左右
泡芙烤好后,用筷子在底部扎一个洞。或者将泡芙切成两半
淡奶油加糖,打发至九分发,挤入泡芙中
