花果茶浸泡于600克沸水中,至茶水入味,捞出果粒,500ML茶水冷却备用
将5片半吉利丁片浸泡于冰水中软化备用
冷却的250ML茶水与蛋黄和细砂糖混合煮至约80度,过滤后加入溶化的吉利丁片拌匀
鲜奶油打发至6分发,加入拌匀
加入利口酒拌匀
慕斯模内铺上一层海绵蛋糕体,再将慕斯蛋糕溶液倒入8分满,冷冻3小时
将剩下的4片吉利丁浸入冰水中软化,与250ML茶水一起加热至溶化,此为装饰材料
慕斯模具出冷冻室,将装饰材料倒入模型中至满,再次冷藏至凝结即可
