将苦瓜、黄瓜、茄子全部切长5厘米、宽1厘米的段
碗放水,茄子段泡在水中5分钟左右
苦瓜段和黄瓜段一起撒盐,腌10分钟左右后将盐水沥干
葱切花,姜和蒜切片,红椒切小丁
锅入中量油,依次将苦瓜、黄瓜、茄子入锅滑油断生,煎至七八分熟
锅留少油,入姜片、蒜片炒香
加入辣椒酱、高汤、白胡椒粉、少量的盐烧开
加入过油的苦瓜、黄瓜、茄子翻炒1~2分钟,加蚝油、鸡精,最后少勾点水淀粉,淋点香油增香
